Depart Lower Austria for the program in Burgenland. Morning focus on sustainable vineyard practices — from organic to biodynamic methods (including Demeter-certified farms). Visit includes vineyard parcels, compost systems, biodiversity zones, and vineyard management strategy. Lunch at the lake. Afternoon cellar technology session: spontaneous vs. controlled fermentations, vessel choice, temperature monitoring, and pressing protocols. Walk-through of modern fermentation cellar and tasting from tank or barrel. In the early evening visit the Austrian Wine Academy for a short introduction and then a tasting of wine from 25 vineyards and 85 wines – together with other wine professionals. Overnight stay in Burgenland. Dinner with regional specialties and open discussion.
