After breakfast at the hotel, we'll set out on the day's adventure. In the South of the Mexico City, we can find Xochimilco, where prehispanic natives built the chinampas on top of a great lake. This are islands used for agriculture, that through time, conformed a great network of canals, which we'll sail through, enjoying nature and the presence of its flora and fauna. We will embark on a cayuco (a boat smaller than a canoe, with a flat base, propelled by paddles), we will silently watch the birds, realizing that this is a living ecosystem which is home for several native species, including migrating ones. We are going to row through the canals, the same way the natives did it so many years ago. We'll have a small coffee break and arrive to our chinampa for a traditional local snack. Then, we will learn from the ancient and new techniques used at the chinampa to produce a sustainable an organic agriculture.
