The chefs work through a starter, a main and a dessert in the open, explaining the techniques and the ingredients as they go, which is the fastest way anyone has found to understand why Alentejo food tastes the way it does. Every meal here is built to put you inside Portuguese cooking rather than beside it. Across thirteen nights you are walked through the regions and the centuries of it, from Alentejo bread and olive oil to coastal traditions and recipes that have not changed in generations. No two dinners are the same.
Then, once the children are in bed and with the nannies and counsellors safely supervising, the adults who want to come are welcome down in the wine cellar. An archaeologist walks us through the Trilogy of the Muses, the estate's three Musas wines, poured alongside regional things to eat, with a guitarist playing in the corner. Nobody is expected.
