My Insider Tip: Traditional Cologne taverns are run by a Köbes (the traditional name for a local beer waiter, known for their blue aprons and famously blunt, friendly humor). They will continuously replace your empty, cylindrical Stange glass with a fresh, cold beer without you ever asking. To tell the Köbes you are officially finished, simply place your cardboard beer coaster directly on top of your glass. If you don't cover the top, the beer will keep arriving!
